The bike tour starts at Horb-am-Neckar. It can be reached from Strasbourg with German trains (Deutsch-Bundesbahn and/or private regional companies. The selection of routes and the purchase of tickets can be done very, very easily on the website of the Deutsch-Bundesbahn. The site is much better than that of the SNCF. You can choose the type of train you want (the Régionaux, TER equivalents, are the best choices).
On the other hand, it is no longer possible to come to Strasbourg by TGV since 2017. By TER it requires a succession of connections that make the journey far too long. The only solution is therefore to rent a van on the Aller-Simple (Rent-a-Car or Ville-à-Ville).
For the return journey from Bayreuth the same options apply. However, an additional solution is to rent a vehicle from Bayreuth to Offenburg by SIXT. The return trip from Offenburg to Strasbourg is very easy by a very frequent train connection.

The entire hike was done in camping mode:
